March 19, 1942 - September 22, 2019
James “Jim” Martin Slaughter Jr., 77 of Plano, Texas passed away surrounded by family and friends on September 22, 2019.
Jim was born in Abilene, Texas on March 19, 1942 to Frances Mae Thomas and Dr. James Martin Slaughter. He was a direct descendent of Collin McKinney who was a “Son of Texas” and drafted the Texas Declaration of Independence.
Jim was a proud graduate of Hillcrest High School Class of 1960. He went on to enlist in the United States Marine Corps in 1961 where he was stationed in El Torro, CA and served honorably until his discharge in 1964 as a Lance Corporal. Following his service, Jim would enjoy more than 25 years in the restaurant business. People of Dallas will fondly remember his consistently amazing barbecue restaurants, most notably Penny Pinchers and Buns Barbecue where long lines always extended out the doors.
The IT boom of the 90’s took Jim from Dallas to Chicago and later to San Francisco where he lived for several years. Returning to Dallas and not quite ready to retire, he utilized his love of motorcycles and began teaching motorcycle training courses. There he would meet his future wife Shannon Harden. Together they would open and operate Texas Motorcycle Training for the next 10 years until his retirement.
Jim left us all too soon and will be remembered not only for his multiple successes in life, but also for his strong character, enduring work ethic and unwavering sense of loyalty.
